2 cups shredded fresh or desiccated coconut (plus extra for rolling)

1 cup pitted dates (soaked in warm water for 10 min, then drained)

Instructions
Step 1: Prepare the Dates
Blend soaked dates into a smooth paste.
Step 2: Roast Coconut
In a pan, lightly roast coconut for 2–3 minutes until fragrant.
Step 3: Mix & Roll
Combine coconut, almond flour, cardamom, and date paste. Add coconut oil and mix well.
Take small portions and roll into laddoos. Coat with extra shredded coconut.
Step 4: Garnish
Press a pistachio piece on each laddoo for a festive look.
