Ingredients:

1 cup Almond Milk (Buy here)

1 cup Oat Milk (Buy here)

2 tbsp Almonds (soaked & peeled)

2 tbsp Cashews (soaked)

1 tbsp Poppy seeds (soaked for 30 minutes)

1 tbsp Fennel seeds

3-4 Cardamom pods
-
1/2 tsp Black pepper powder

1 tbsp Rose water
-
1 tbsp Chia seeds (optional, for thickness)

2 tbsp Maple syrup or Jaggery (as a natural sweetener)

Saffron strands & chopped pistachios for garnish
Instructions:
Step 1: Preparing the Thandai Paste

Drain the soaked almonds, cashews, and poppy seeds.

In a blender, add the soaked nuts, poppy seeds, fennel seeds, cardamom, and black pepper powder.

Blend with a splash of Almond Milk to make a smooth paste.
Step 2: Making the Thandai

In a saucepan, heat Almond Milk and Oat Milk on low flame (do not boil).

Add the prepared Thandai paste and stir well.

Mix in rose water and chia seeds (if using), and let it infuse for 5-10 minutes.

Sweeten with maple syrup or jaggery according to taste.

Allow the mixture to cool and refrigerate for at least 1 hour.
Step 3: Serving the Thandai
