Good Graze works with a single ingredient across the whole range: coconut. Virgin coconut oil, coconut butter, coconut sugar, coconut flour, desiccated coconut, coconut chips in toasted, vanilla and chocolate, and a set of South Indian coconut chutneys in tomato, pudina, green and red.

Reading a coconut label

• Virgin versus refined oil. Virgin coconut oil is cold-extracted from fresh coconut and keeps its aroma; refined oil is made from dried copra, is neutral in smell and has a higher smoke point. Both are useful, for different cooking.
• Coconut butter is not coconut oil. Butter is the whole ground coconut flesh, so it carries the fibre as well as the fat and behaves like a nut butter. Oil is the extracted fat only.
• Coconut sugar. It has trace minerals that white sugar does not, but it is still sugar, roughly the same calorie count per gram. Treat it as a swap in flavour, not a licence to use more.
• Coconut flour absorbs a lot of liquid — far more than wheat or almond flour. Recipes generally need about a quarter of the quantity plus extra liquid. It is naturally gluten-free.
• Storage. Coconut oil solidifies below about 24°C; this is normal, not spoilage. Desiccated coconut and chips go rancid once opened — keep them sealed and use within a few weeks.
• Check the FSSAI licence number on the pack.
