Can I replace sugar with it directly?
Roughly, yes — start with an equal quantity and adjust. Jaggery brings its own caramel flavour and will darken pale batters and drinks.
Will it dissolve in cold drinks?
It dissolves more slowly than white sugar in cold liquid. Stir it into a little warm water first, then add.
Why is this batch darker than my last one?
Shade depends on the cane and the boiling batch. Both light and dark jaggery are normal; the darker ones taste slightly more molasses-like.
How do I stop it going lumpy?
Keep it airtight and away from humidity. If it does set, break it up with a dry spoon or pulse it briefly in a grinder.
